Pancake Perfection

Anybody else love pancakes? The best thing about this recipe by @thehonestgrazer is that they are healthy & yummy! We really do adore this morning treat and are sure you will too!

Ingredients

1 cup buckwheat or oat flour
1 ripe banana*
2 tbsp aquafaba
3/4 cup oat milk
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla extract
2 tsp apple cider vinegar

 

Method


Blend the buckwheat or oats until fine or resembles flour.

Mash the banana until almost liquid, and add the flour and remaining ingredients. Cover the mix and leave in the fridge for an hour or overnight.
When you’re ready to make them, bring a pan to a medium high heat, heat a small amount of virgin coconut oil and drop 1 heaped tablespoon of batter to the pan. Allow to cook / bubble before flipping.

 

Serve with tahini or macadamia nut butter and maple syrup or add crushed dark chocolate to the mix, you won’t regret!



Side note: if you hate banana, replace the banana with 2 tbsp ground flaxseeds or 1 tbsp chia seeds mixed with equal parts water and 1 tbsp coconut oil or simply use 1/3 cup mashed pumpkin
